Fall Wine Dinner
FALL WINE DINNER
We live in the midst of a wonderful food growing region and want to devote our final wine dinner of the year to honoring and supporting the local farmers who provide this bounty. All of the major food ingredients served will come from within 50 miles of Amherst. We will focus on farmers whose farming practices are the most natural – organically grown produce and meats raised humanely and without resort to the magic of modern chemistry. The adverse environmental by-products associated with transporting food long distances will be moot. We will pair the food with exciting wines from California and Oregon. Here are some dishes you can look forward to.
First Course: Bagna Cauda, an ancient Piedmont silky hot bath dip of garlic served with a melange of locally harvested raw vegetables. Wine: Oregon Pinot Blanc.
Second Course: Free range chicken stuffed with goat cheese wrapped with pancetta and sauteed in a wine reduction with fresh beet garnish. Wine: California Pinot Noir.
Third Course: Short Ribs finished with a wine & berry demi-glaze with local potato gratinee, thinly sliced and layered with creamy Parmesan cheese. Wine: California red blend.
Dessert: Apple-Ricotta cake made with three varieties of local apples. Wine: California dessert white.
